Mushroom growing cheat sheet
Every beginner mushroom, its substrate, and its timeline — on one page you can pin to the wall. Free to use and print.
A mushroom growing cheat sheet is a one-page reference that maps each beginner mushroom to its best substrate, how long it takes to colonize and fruit, and the temperature and humidity it likes. Keep it by your grow so you can plan at a glance — then dive into the full step-by-step guide when you want the details. This is educational information for cultivating gourmet mushrooms from spawn; always identify any wild mushroom with an expert before eating it.
Beginner species at a glance
| Mushroom | Best substrate | Colonize | Fruit temp | Difficulty |
|---|---|---|---|---|
| Oyster (Pleurotus) | Straw, coffee grounds | 2–3 weeks | 55–75°F | Easy |
| Lions mane | Hardwood sawdust (supplemented) | 2–4 weeks | 60–70°F | Easy–Medium |
| King oyster | Supplemented sawdust | 3–4 weeks | 60–70°F | Medium |
| Shiitake | Hardwood sawdust blocks or logs | 6–12 weeks (blocks) | 55–70°F | Medium |
| Wine cap | Wood chips + straw (outdoor bed) | 4–8 weeks | 60–80°F | Easy (outdoors) |
Ranges are general reference for home cultivation; exact times vary with temperature, spawn rate, and substrate.
The four steps, every time
- Get spawn — living mycelium on grain, your “seed.”
- Prepare substrate — pasteurize (straw, coffee) or sterilize (supplemented sawdust) so the mushroom wins, not mold.
- Colonize — mix spawn in, keep warm and dark until the substrate turns solid white.
- Fruit — move to indirect light, high humidity, and fresh air; harvest just before the caps open.
Conditions to hit
| Stage | Temperature | Humidity | Light & air |
|---|---|---|---|
| Colonization | Warm, ~70–75°F | Sealed / ambient | Dark, minimal air |
| Fruiting | Species range (see above) | 85–95% | Indirect light, fresh air daily |
Contamination red flags
Healthy mycelium is bright white and smells earthy. Walk away from a block if you see:
- Green, black, or blue-green patches — mold (trichoderma, aspergillus). The most common killer.
- A sour, rotten, or off smell — bacterial contamination.
- Slimy or wet, sunken spots — too wet, likely bacterial.
When contamination takes hold, discard that block, clean up, and start fresh — it will not out-compete mold. More on avoiding it in the 7 beginner mistakes. Cultivation like this is standard fungiculture.

What is a mushroom growing cheat sheet?
A one-page reference mapping each beginner mushroom to its best substrate, colonization and fruiting time, and the conditions it likes — so you can plan a grow at a glance.
What is the easiest mushroom to grow?
Oyster mushrooms — fast, forgiving, and happy on cheap straw or coffee grounds. The best first grow before lions mane or shiitake.
What temperature do mushrooms fruit at?
Most beginner gourmet mushrooms fruit between about 55 and 75°F, each with a narrower preferred band, plus high humidity and fresh air.
How do I spot contamination?
Any color other than bright white — green, black, or blue-green mold — or a sour, off smell. Healthy mycelium is white and earthy.
